Ingredients:
- Moong dal (split green gram) – ½ cup (soaked for 1 hour)
- Carrots – ½ cup, diced
- Zucchini – ½ cup, diced
- Spinach – ½ cup, chopped
- Ginger – 1 inch, finely chopped
- Cumin seeds – 1 tsp
- Turmeric powder – ¼ tsp
- Coriander powder – ½ tsp
- Hing (asafoetida) – a pinch
- Black pepper – ¼ tsp
- Curry leaves – 5-6
- Fresh lemon juice – 1 tsp
- Cilantro – a handful, chopped
- Ghee (clarified butter) – 1 tsp
- Water – 3 cups
- Salt – as per taste
Method:
- Heat ghee in a pan and add cumin seeds, hing, and curry leaves. Let the cumin seeds splutter.
- Add chopped ginger and sauté for a minute.
- Add diced carrots, zucchini, and soaked moong dal to the pan. Stir well.
- Sprinkle turmeric powder, coriander powder, and black pepper. Mix to coat the vegetables and dal with the spices.
- Pour in 3 cups of water and bring the mixture to a boil.
- Lower the heat, cover, and let it simmer for 20-25 minutes until the vegetables and dal are fully cooked.
- Add chopped spinach and let it cook for another 5 minutes.
- Turn off the heat, add fresh lemon juice, and garnish with chopped cilantro.
- Serve warm.
